Za'atar-Tahini Savory Pear and Arugula Flatbread

A warm flatbread gets layered with peppery greens, juicy pear, and a creamy tahini drizzle balanced by bright herbs and lemon.

Ingredients

  • ready-made flatbreads4 small
  • olive oil2 tbsp
  • za'atar2 tsp
  • tahini1/4 cup
  • lemon juice2 tbsp
  • honey1 tsp
  • arugula2 cups
  • ripe pear, thinly sliced1
  • crumbled feta1/2 cup
  • mint leaves, torn2 tbsp

Method

  1. 1Warm the flatbreads in a dry skillet or oven until pliable and lightly toasted.
  2. 2Stir together tahini, lemon juice, honey, and 2 to 3 tablespoons of water until smooth and pourable.
  3. 3Brush each flatbread with olive oil and sprinkle lightly with za'atar.
  4. 4Divide the arugula and pear slices over the flatbreads.
  5. 5Drizzle generously with tahini sauce, then scatter feta and mint over the top.
  6. 6Cut into wedges and serve immediately while the bread is warm.
  7. 7Finish with a tiny extra pinch of za'atar if you want more herbal aroma.

Tips

  • Slice the pear very thin so it bends nicely over the flatbread.
  • The sauce should be fluid enough to drizzle; whisk in water a teaspoon at a time.
  • If your feta is very salty, skip any extra salt in the sauce.
