Ingredients
- ready-made flatbreads4 small
- olive oil2 tbsp
- za'atar2 tsp
- tahini1/4 cup
- lemon juice2 tbsp
- honey1 tsp
- arugula2 cups
- ripe pear, thinly sliced1
- crumbled feta1/2 cup
- mint leaves, torn2 tbsp
Method
- 1Warm the flatbreads in a dry skillet or oven until pliable and lightly toasted.
- 2Stir together tahini, lemon juice, honey, and 2 to 3 tablespoons of water until smooth and pourable.
- 3Brush each flatbread with olive oil and sprinkle lightly with za'atar.
- 4Divide the arugula and pear slices over the flatbreads.
- 5Drizzle generously with tahini sauce, then scatter feta and mint over the top.
- 6Cut into wedges and serve immediately while the bread is warm.
- 7Finish with a tiny extra pinch of za'atar if you want more herbal aroma.
Tips
- Slice the pear very thin so it bends nicely over the flatbread.
- The sauce should be fluid enough to drizzle; whisk in water a teaspoon at a time.
- If your feta is very salty, skip any extra salt in the sauce.
