Ingredients

  • Fresh corn kernels2 cups
  • All-purpose flour3/4 cup
  • Egg1 large
  • Milk1/2 cup
  • Za'atar2 tsp
  • Green onion, thinly sliced3
  • Tahini2 tbsp
  • Lemon juice2 tbsp
  • Baking powder1 tsp
  • Vegetable oil for fryingas needed

Method

  1. 1Whisk the flour, baking powder, za'atar, egg, milk, salt, and pepper into a thick batter.
  2. 2Fold in the corn kernels and green onion.
  3. 3Heat a thin layer of oil in a skillet over medium heat.
  4. 4Drop spoonfuls of batter into the pan and flatten lightly.
  5. 5Cook until deeply golden on both sides, then drain briefly on paper towels.
  6. 6Whisk tahini with lemon juice and a splash of water to make a drizzle.
  7. 7Serve the fritters warm with the lemon-tahini sauce.

Tips

  • Let the batter rest 5 minutes so the flour hydrates and the fritters hold together.
  • Use fresh or thawed corn that is well drained to prevent sogginess.
  • A little grated halloumi folded into the batter makes them richer.
