Ingredients
- Mackerel fillets4 fillets
- Cooked short-grain rice3 cups
- Olive oil3 tbsp
- Red onion, very thinly sliced1 medium
- Sumac2 tsp
- Lemon juice2 tbsp
- Cucumber, cut into matchsticks1 medium
- Dill, chopped2 tbsp
- Flatbread or rice paper wrappers8 small
- Greek yogurt1/2 cup
Method
- 1Season the mackerel with salt, pepper, and 1 teaspoon of sumac.
- 2Heat 1 tablespoon of olive oil in a skillet and sear the fish skin-side down until crisp and cooked through, then flake into large pieces.
- 3Toss the rice with the remaining sumac, lemon juice, dill, and a little salt.
- 4Quickly soften the onion in the remaining olive oil until just translucent, then cool slightly.
- 5Soften the flatbread briefly in a dry pan or dip rice paper wrappers in warm water until pliable.
- 6Fill each wrapper with rice, cucumber, onion, and mackerel, then add a small spoonful of yogurt.
- 7Fold tightly into parcels and serve with extra lemon wedges.
Tips
- Let the fish cool for a minute before folding so it stays in generous flakes.
- Keep the rice just warm, not hot, so the wrappers stay flexible and do not tear.
- A few sliced radishes make the filling even more crisp and vivid.
