- Fine semolina1/3 cup
- Milk2 cups

- Rosewater1 1/2 tsp

Method
- 1In a saucepan, whisk the milk, semolina, sugar, cardamom, and salt over medium heat.
- 2Cook, whisking constantly, until thick and glossy, about 6 to 8 minutes.
- 3Remove from the heat and stir in the rosewater and orange zest.
- 4Divide half the chopped dates among four small cups or jars.
- 5Spoon the semolina over the dates, then top with the remaining dates and pistachios.
- 6Chill for at least 10 minutes or serve warm for a softer texture.

- Stir constantly once the semolina starts to thicken to avoid lumps.
- For a deeper caramel note, briefly toast the semolina in the dry pan before adding milk.
