Rosewater Date Semolina Pots

Silky semolina custards layered with soft dates, rosewater, and a crackle of toasted pistachios.

Ingredients

  • Fine semolina1/3 cup
  • Milk2 cups
  • Sugar1/4 cup
  • Rosewater1 1/2 tsp
  • Dates, finely chopped8
  • Ground cardamom1/4 tsp
  • Pistachios, toasted and chopped1/4 cup
  • Orange zest1 tsp
  • Saltpinch

Method

  1. 1In a saucepan, whisk the milk, semolina, sugar, cardamom, and salt over medium heat.
  2. 2Cook, whisking constantly, until thick and glossy, about 6 to 8 minutes.
  3. 3Remove from the heat and stir in the rosewater and orange zest.
  4. 4Divide half the chopped dates among four small cups or jars.
  5. 5Spoon the semolina over the dates, then top with the remaining dates and pistachios.
  6. 6Chill for at least 10 minutes or serve warm for a softer texture.

Tips

  • Stir constantly once the semolina starts to thicken to avoid lumps.
  • For a deeper caramel note, briefly toast the semolina in the dry pan before adding milk.
  • A few drops of extra rosewater on top just before serving boosts the aroma.
