Sour Cherry Lamb Lettuce Parcels

Ingredients

  • Ground lamb500 g
  • Olive oil2 tbsp
  • Yellow onion, finely diced1 medium
  • Garlic, minced3 cloves
  • Ground allspice1 tsp
  • Ground cumin1 tsp
  • Sour cherries, pitted1 cup
  • Plain yogurt3/4 cup
  • Mint, chopped1/4 cup
  • Butter lettuce leaves12 large leaves

Method

  1. 1Heat olive oil in a skillet over medium-high heat and cook the onion until softened.
  2. 2Add the lamb, garlic, allspice, cumin, salt, and pepper; cook until browned and crumbly.
  3. 3Stir in the sour cherries and cook just until they burst and glaze the meat.
  4. 4Mix the yogurt with half the mint and a pinch of salt.
  5. 5Arrange lettuce leaves on a platter and spoon the lamb mixture into each leaf.
  6. 6Top with the mint yogurt and the remaining mint, then serve immediately.

Tips

  • If the cherries are very tart, add a small pinch of sugar to balance the filling.
  • Keep the lettuce cold and dry so the parcels stay crisp.
  • A spoonful of crushed cucumber on top adds extra freshness.
