Za'atar Silken Egg Bake with Tomato Seeds and Herb Oil

Ingredients

  • plain yogurt1 cup
  • eggs6
  • za'atar2 tsp
  • cherry tomatoes, halved1 1/2 cups
  • olive oil3 tbsp
  • green onions, thinly sliced3
  • parsley, chopped1/2 cup
  • dill, chopped2 tbsp
  • salt3/4 tsp
  • black pepper1/4 tsp
  • lemon zest1 tsp
  • pita, for serving4 pieces

Method

  1. 1Heat the oven to 200°C.
  2. 2Spread the yogurt in a lightly oiled baking dish and season with salt, pepper, and lemon zest.
  3. 3Scatter the tomatoes and green onions over the yogurt, then make six small wells.
  4. 4Crack an egg into each well and sprinkle with za'atar.
  5. 5Bake for 10 to 13 minutes, until the whites are just set and yolks are still soft.
  6. 6Blend or finely stir the parsley, dill, and olive oil into a loose herb oil.
  7. 7Spoon the herb oil over the eggs and serve immediately with warm pita.

Tips

  • Use a shallow dish so the eggs cook evenly.
  • Pull the dish early if you want runnier yolks; carryover heat will finish the eggs.
  • Stir the herb oil just before serving so the color stays bright.
