Za'atar Plum Hand Pies with Sesame Molasses Drizzle

Flaky hand pies are filled with jammy plums, fragrant za'atar, and a nutty sesame molasses drizzle.

Ingredients

  • all-purpose flour2 cups
  • cold butter, cubed120 g
  • plain yogurt1/2 cup
  • salt1/2 tsp
  • ripe plums, diced3 cups
  • sugar2 tbsp
  • za'atar1 1/2 tsp
  • sesame seeds2 tbsp
  • egg, beaten1
  • tahini2 tbsp
  • date molasses1 tbsp

Method

  1. 1Heat the oven to 200°C and line a tray with baking paper.
  2. 2Rub the butter into the flour and salt until the mixture looks like coarse crumbs, then mix in the yogurt to form a soft dough.
  3. 3Chill the dough for 10 minutes while you toss the plums with sugar and za'atar.
  4. 4Roll the dough out and cut into 8 squares or circles.
  5. 5Fill half of each piece with the plum mixture, fold over, seal the edges, and brush with beaten egg.
  6. 6Sprinkle with sesame seeds and bake until golden and bubbling, about 20 minutes.
  7. 7Stir tahini with date molasses and a spoon of warm water, then drizzle over the warm pies.

Tips

  • Use ripe but still firm plums so the filling softens without turning watery.
  • If the dough feels sticky, dust lightly rather than adding lots of flour.
  • Serve slightly warm so the sesame molasses drizzle stays fluid and aromatic.
