Za'atar Mushroom and Walnut Manakish Pockets

Ingredients

  • pizza dough450 g
  • mushrooms, finely chopped2 cups
  • walnuts, chopped3/4 cup
  • garlic, minced2 cloves
  • za'atar2 tbsp
  • lemon zest1 tsp
  • olive oil3 tbsp
  • yogurt2 tbsp
  • salt1 tsp
  • black pepper1/2 tsp

Method

  1. 1Preheat the oven to 230 C and line a baking sheet with parchment.
  2. 2Sauté the mushrooms with olive oil, garlic, salt, and pepper until their moisture cooks off and they turn deep brown.
  3. 3Stir in the walnuts, za'atar, lemon zest, and yogurt, then cook for 1 minute more and cool slightly.
  4. 4Divide the dough into 4 portions and flatten each into a small oval or circle.
  5. 5Spoon the filling onto one half of each piece, fold over, and seal the edges firmly.
  6. 6Bake for 10 to 12 minutes until puffed and golden, then cool for 2 minutes before serving.

Tips

  • Cook the mushroom filling until dry so the pockets stay crisp, not soggy.
  • A little yogurt helps bind the filling without making it heavy.
  • Brush the dough lightly with olive oil for a more bronzed crust.
