Stuffed Swiss Chard Rolls with Bulgur, Lentils, and Apricot

Tender chard leaves wrap a hearty filling of bulgur and lentils, brightened with dried apricot and simmered in a lemony broth.

Ingredients

  • large Swiss chard leaves16
  • cooked green lentils1 1/2 cups
  • fine bulgur1/2 cup
  • small onion, finely chopped1
  • olive oil3 tbsp
  • dried apricots, finely chopped1/3 cup
  • ground cumin1 tsp
  • ground allspice1/2 tsp
  • vegetable broth2 cups
  • lemon juice3 tbsp

Method

  1. 1Bring a pot of water to a boil and briefly blanch the chard leaves for 20 seconds, then cool them in cold water and pat dry.
  2. 2Sauté onion in olive oil until soft, then mix it with lentils, bulgur, apricots, cumin, allspice, and a pinch of salt.
  3. 3Trim thick chard stems if needed, then place a spoonful of filling near the base of each leaf and roll tightly.
  4. 4Arrange the rolls seam-side down in a wide pan.
  5. 5Pour in vegetable broth and lemon juice, cover, and simmer gently for 20 minutes until the bulgur is tender.
  6. 6Uncover and let the liquid reduce slightly so the rolls are glossy, not watery.
  7. 7Serve warm with a spoonful of cooking juices over the top.

Tips

  • If chard leaves are small, overlap two leaves to make a larger wrapper.
  • Keep the simmer gentle so the rolls stay intact.
  • A little extra lemon at the end makes the apricot flavor pop without making the dish sweet.
