Method
- 1Preheat the oven to 350°F and line a small loaf pan with parchment.
- 2Whisk flour, baking powder, and salt in one bowl.
- 3In another bowl, whisk sugar, eggs, olive oil, orange zest, orange juice, rosewater, and yogurt until smooth.
- 4Fold the dry ingredients into the wet mixture just until combined.
- 5Mix pistachios, brown sugar, and melted butter, then scatter the crumb over the batter.
- 6Bake for 35 to 45 minutes, until the center springs back and a tester comes out clean.
- 7Cool for 15 minutes before lifting out of the pan and slicing.
Tips
- Do not overmix, or the loaf will bake up dense rather than delicate.
- Rosewater should be subtle; if yours is strong, start with 1 teaspoon and taste the batter aroma.
