Rosewater Orange Olive Oil Loaf with Pistachio Streusel

Ingredients

  • all-purpose flour1 1/2 cups

  • fine salt1/4 tsp
  • sugar3/4 cup
  • eggs2
  • olive oil1/2 cup
  • orange zest1 tbsp
  • orange juice1/3 cup
  • rosewater1 1/2 tsp
  • plain yogurt1/2 cup
  • pistachios, chopped1/3 cup
  • brown sugar2 tbsp
  • butter, melted2 tbsp

Method

  1. 1Preheat the oven to 350°F and line a small loaf pan with parchment.
  2. 2Whisk flour, baking powder, and salt in one bowl.
  3. 3In another bowl, whisk sugar, eggs, olive oil, orange zest, orange juice, rosewater, and yogurt until smooth.
  4. 4Fold the dry ingredients into the wet mixture just until combined.
  5. 5Mix pistachios, brown sugar, and melted butter, then scatter the crumb over the batter.
  6. 6Bake for 35 to 45 minutes, until the center springs back and a tester comes out clean.
  7. 7Cool for 15 minutes before lifting out of the pan and slicing.

Tips

  • Do not overmix, or the loaf will bake up dense rather than delicate.
  • Rosewater should be subtle; if yours is strong, start with 1 teaspoon and taste the batter aroma.
