Rose-Scented Semolina Custard Cups with Sesame Halva Crumble

Velvety semolina custard is perfumed with rose and orange blossom, then topped with a nutty sesame crumble.

Ingredients

  • milk3 cups
  • fine semolina1/3 cup
  • sugar1/3 cup
  • cornstarch1 1/2 tbsp
  • orange blossom water1 tsp
  • rose water1/2 tsp
  • vanilla extract1 tsp
  • salt1 pinch
  • sesame seeds1/4 cup
  • almonds, chopped1/3 cup
  • butter2 tbsp
  • date syrup2 tbsp

Method

  1. 1Toast the sesame seeds and almonds in a dry pan until fragrant, then mix with the date syrup and set aside to cool.
  2. 2Whisk the semolina, cornstarch, sugar, and salt into the milk in a saucepan.
  3. 3Cook over medium heat, whisking constantly, until the mixture thickens to a smooth custard.
  4. 4Remove from the heat and stir in the butter, vanilla, orange blossom water, and rose water.
  5. 5Divide into four cups and let cool for 10 minutes, then chill until just set.
  6. 6Crumble the sesame mixture over the top before serving.
  7. 7Add a few extra drops of rose water if you want a stronger floral aroma.

Tips

  • Whisk continuously to keep the custard silky.
  • Cool the custard slightly before chilling to prevent a skin from forming.
  • The crumble should be sticky but still sandy enough to break apart.
