Orange Blossom Semolina Clouds with Sesame Crumble

Ingredients

  • fine semolina1 cup
  • all-purpose flour1/2 cup
  • baking powder1 1/2 tsp
  • plain yogurt3/4 cup
  • eggs2
  • sugar1/2 cup
  • orange blossom water1 1/2 tsp
  • butter, melted1/4 cup
  • sesame seeds1/3 cup
  • honey2 tbsp
  • orange zest1 tsp

Method

  1. 1Heat the oven to 350°F and line a small baking pan with parchment.
  2. 2Whisk semolina, flour, and baking powder in one bowl, then mix yogurt, eggs, sugar, orange blossom water, and melted butter in another.
  3. 3Combine the wet and dry mixtures and spread the batter into the pan.
  4. 4Bake until set and lightly golden, about 25 to 30 minutes.
  5. 5Toast sesame seeds in a dry pan, then stir in honey and orange zest until the mixture clumps into a crumble.
  6. 6Cool the cake slightly, cut into squares, and scatter the sesame crumble over the top before serving.

Tips

  • Do not overbake; the cake should stay soft and tender in the center.
  • Let the sesame crumble cool for a minute before breaking it apart.
  • A light dusting of extra orange zest makes the aroma pop.
