Method
- 1Make a quick tart dough by rubbing flour, butter, and powdered sugar together until crumbly, then mix in the egg yolk and enough cold water to form a dough.
- 2Chill the dough for 15 minutes, then press it into four small tartlet pans and bake at 375°F (190°C) for 12 minutes.
- 3Whisk labneh, cream, eggs, sugar, and orange blossom water until smooth.
- 4Pour the custard into the warm tart shells and bake 18 to 20 minutes, just until the centers are barely set.
- 5Cool completely so the custard firms up cleanly.
- 6Top with crushed pistachios and a little citrus zest before serving.
