Ingredients

  • all-purpose flour1 1/2 cups

  • baking powder1 1/2 tsp

  • ground mahleb1/2 tsp
  • eggs2
  • olive oil1/3 cup
  • orange juice1/2 cup
  • orange zest1 tbsp
  • plain yogurt1/2 cup
  • pistachios, chopped1/3 cup

Method

  1. 1Heat the oven to 350°F and line an 8-inch square pan with parchment.
  2. 2Whisk flour, sugar, baking powder, salt, and mahleb in a bowl.
  3. 3In another bowl, whisk eggs, olive oil, orange juice, orange zest, and yogurt until smooth.
  4. 4Fold the wet ingredients into the dry just until combined, then spread the batter in the pan.
  5. 5Sprinkle pistachios over the top and bake for 28 to 32 minutes until golden and set.
  6. 6Cool completely before slicing into squares.

  • Do not overmix or the cake will bake up dense.
