Freekeh and Sumac Chicken Skillet with Apricots

Nutty freekeh simmers with chicken, dried apricots, and a sharp sumac finish for a one-pan supper with depth.

Ingredients

  • chicken thighs, boneless1 1/2 lb
  • freekeh1 cup
  • olive oil2 tbsp
  • onion, sliced1 large
  • garlic, minced3 cloves
  • ground cumin1 tsp
  • sumac2 tsp
  • dried apricots, sliced1/2 cup
  • chicken broth2 1/2 cups
  • spinach3 cups
  • salt and black pepperto taste

Method

  1. 1Season the chicken with half the sumac, salt, and pepper.
  2. 2Heat olive oil in a deep skillet and brown the chicken on both sides, then remove it.
  3. 3Cook onion in the same pan until softened, add garlic and cumin, and stir for 30 seconds.
  4. 4Add freekeh, apricots, broth, and remaining sumac, then return the chicken to the skillet.
  5. 5Cover and simmer gently for 18 to 20 minutes, until the freekeh is tender and the chicken is cooked through.
  6. 6Stir in spinach until wilted, then taste and adjust seasoning before serving.

Tips

  • Rinse freekeh briefly if it is dusty, then drain well.
  • If the pan looks dry before the grain is tender, add a splash more broth.
  • A squeeze of lemon at the table brightens the apricots and sumac nicely.
