Freekeh and Sumac Chicken Skillet with Apricots

Ingredients
- chicken thighs, boneless1 1/2 lb
- freekeh1 cup
- olive oil2 tbsp
- onion, sliced1 large
- garlic, minced3 cloves
- ground cumin1 tsp
- sumac2 tsp
- dried apricots, sliced1/2 cup
- chicken broth2 1/2 cups
- spinach3 cups
- salt and black pepperto taste
Method
- 1Season the chicken with half the sumac, salt, and pepper.
- 2Heat olive oil in a deep skillet and brown the chicken on both sides, then remove it.
- 3Cook onion in the same pan until softened, add garlic and cumin, and stir for 30 seconds.
- 4Add freekeh, apricots, broth, and remaining sumac, then return the chicken to the skillet.
- 5Cover and simmer gently for 18 to 20 minutes, until the freekeh is tender and the chicken is cooked through.
- 6Stir in spinach until wilted, then taste and adjust seasoning before serving.
Tips
- Rinse freekeh briefly if it is dusty, then drain well.
- If the pan looks dry before the grain is tender, add a splash more broth.
- A squeeze of lemon at the table brightens the apricots and sumac nicely.
