Method
- 1In a bowl, combine freekeh, scallions, parsley, mint, eggs, feta, lemon zest, and flour until the mixture holds together.
- 2Mix tahini, lemon juice, salt, and enough water to make a smooth drizzle; set aside.
- 3Heat a thin layer of olive oil in a skillet over medium heat.
- 4Scoop heaped tablespoons of the freekeh mixture into the pan and flatten gently into fritters.
- 5Cook until deeply golden on both sides and crisp at the edges, about 3 to 4 minutes per side.
