Citrus Charred Cauliflower Freekeh Skillet

Smoky cauliflower and nutty freekeh are brightened with lemon, herbs, and a whisper of toasted spice.

Ingredients

  • freekeh, rinsed1 cup
  • cauliflower florets4 cups
  • olive oil3 tbsp
  • yellow onion, finely chopped1 medium
  • garlic, minced3 cloves
  • ground coriander1 tsp
  • ground cumin1/2 tsp
  • lemon zest1 tsp
  • lemon juice3 tbsp
  • parsley, chopped1/2 cup
  • mint, chopped2 tbsp
  • toasted almonds, chopped1/4 cup

Method

  1. 1Cook the freekeh in salted water until tender but chewy, then drain well.
  2. 2Heat 2 tablespoons of olive oil in a large skillet and sear the cauliflower until browned in spots.
  3. 3Add the onion and cook until softened, then stir in the garlic, coriander, and cumin for 30 seconds.
  4. 4Fold in the cooked freekeh, lemon zest, and lemon juice; season with salt and pepper.
  5. 5Remove from the heat and mix in parsley, mint, and the remaining olive oil.
  6. 6Finish with chopped almonds and serve warm with extra lemon on the side.

Tips

  • Let the cauliflower develop good browning before stirring too often.
  • Add the herbs off the heat to keep their flavor fresh and vivid.
  • A spoonful of yogurt on top makes this feel especially complete.
