Citrus Charred Cauliflower Freekeh Skillet

Ingredients
- freekeh, rinsed1 cup
- cauliflower florets4 cups
- olive oil3 tbsp
- yellow onion, finely chopped1 medium
- garlic, minced3 cloves
- ground coriander1 tsp
- ground cumin1/2 tsp
- lemon zest1 tsp
- lemon juice3 tbsp
- parsley, chopped1/2 cup
- mint, chopped2 tbsp
- toasted almonds, chopped1/4 cup
Method
- 1Cook the freekeh in salted water until tender but chewy, then drain well.
- 2Heat 2 tablespoons of olive oil in a large skillet and sear the cauliflower until browned in spots.
- 3Add the onion and cook until softened, then stir in the garlic, coriander, and cumin for 30 seconds.
- 4Fold in the cooked freekeh, lemon zest, and lemon juice; season with salt and pepper.
- 5Remove from the heat and mix in parsley, mint, and the remaining olive oil.
- 6Finish with chopped almonds and serve warm with extra lemon on the side.
Tips
- Let the cauliflower develop good browning before stirring too often.
- Add the herbs off the heat to keep their flavor fresh and vivid.
- A spoonful of yogurt on top makes this feel especially complete.
