Black Tahini Date Tart with Tahini-Sesame Crust

Ingredients

  • all-purpose flour1 1/4 cups
  • butter, chilled and cubed90 g
  • toasted sesame seeds1/3 cup
  • tahini1/4 cup
  • dates, pitted and chopped1 cup
  • water3/4 cup
  • orange zest1 tsp
  • cardamom1/2 tsp
  • black sesame paste2 tbsp
  • honey2 tbsp
  • salt1/2 tsp
  • pistachios, chopped2 tbsp

Method

  1. 1Preheat the oven to 200 C and lightly grease a small tart pan.
  2. 2Pulse the flour, butter, sesame seeds, salt, and 2 tbsp tahini until the mixture resembles coarse crumbs, then press it into the tart pan.
  3. 3Bake the crust for 10 minutes until just set and lightly golden at the edges.
  4. 4Meanwhile, simmer the dates, water, orange zest, and cardamom until the dates break down into a thick paste.
  5. 5Stir in the black sesame paste, honey, and remaining tahini until glossy and smooth.
  6. 6Spread the date filling into the crust, smooth the top, and chill until set.
  7. 7Finish with chopped pistachios before slicing and serving.

Tips

  • Press the crust firmly into the pan so it holds the dense filling cleanly.
  • If the date mixture looks too thick, loosen it with a spoonful of hot water.
  • For the deepest flavor, let the tart cool completely before slicing.
