Black Tahini Date Tart with Tahini-Sesame Crust

Ingredients
- all-purpose flour1 1/4 cups
- butter, chilled and cubed90 g
- toasted sesame seeds1/3 cup

Method
- 1Preheat the oven to 200 C and lightly grease a small tart pan.
- 2Pulse the flour, butter, sesame seeds, salt, and 2 tbsp tahini until the mixture resembles coarse crumbs, then press it into the tart pan.
- 3Bake the crust for 10 minutes until just set and lightly golden at the edges.
- 4Meanwhile, simmer the dates, water, orange zest, and cardamom until the dates break down into a thick paste.
- 5Stir in the black sesame paste, honey, and remaining tahini until glossy and smooth.
- 6Spread the date filling into the crust, smooth the top, and chill until set.
- 7Finish with chopped pistachios before slicing and serving.
Tips
- Press the crust firmly into the pan so it holds the dense filling cleanly.
- If the date mixture looks too thick, loosen it with a spoonful of hot water.
- For the deepest flavor, let the tart cool completely before slicing.
