Baked Cauliflower and Chickpea Kafta with Minted Yogurt

A spiced vegetable-kafta bake turns cauliflower and chickpeas into a savory, browned tray dish served with cool mint yogurt.

Ingredients

  • cauliflower florets5 cups
  • cooked chickpeas1 1/2 cups
  • egg1
  • breadcrumbs1/2 cup
  • grated onion1/2 cup
  • garlic powder1 tsp
  • ground coriander1 tsp
  • paprika1 tsp
  • olive oil3 tbsp
  • plain yogurt3/4 cup
  • fresh mint, chopped2 tbsp

Method

  1. 1Heat the oven to 400°F (205°C) and lightly oil a baking sheet.
  2. 2Pulse half the chickpeas with the cauliflower in a food processor until finely chopped but not pureed.
  3. 3Mix the cauliflower-chickpea mixture with the remaining chickpeas, egg, breadcrumbs, grated onion, garlic powder, coriander, paprika, salt, and pepper.
  4. 4Form small oval kafta shapes and place them on the tray.
  5. 5Brush with olive oil and bake for 20 to 25 minutes, turning once, until browned and firm.
  6. 6Stir yogurt with mint and a pinch of salt.
  7. 7Serve the kafta hot with the minted yogurt spooned alongside.

Tips

  • If the mixture feels wet, add a tablespoon more breadcrumbs before shaping.
  • For deeper color, broil for the last 1 to 2 minutes, watching carefully.
  • Let the tray rest for 5 minutes after baking so the kafta set properly.
