Baked Cauliflower and Chickpea Kafta with Minted Yogurt

Ingredients

Method
- 1Heat the oven to 400°F (205°C) and lightly oil a baking sheet.
- 2Pulse half the chickpeas with the cauliflower in a food processor until finely chopped but not pureed.
- 3Mix the cauliflower-chickpea mixture with the remaining chickpeas, egg, breadcrumbs, grated onion, garlic powder, coriander, paprika, salt, and pepper.
- 4Form small oval kafta shapes and place them on the tray.
- 5Brush with olive oil and bake for 20 to 25 minutes, turning once, until browned and firm.
- 6Stir yogurt with mint and a pinch of salt.
- 7Serve the kafta hot with the minted yogurt spooned alongside.
Tips
- If the mixture feels wet, add a tablespoon more breadcrumbs before shaping.
- For deeper color, broil for the last 1 to 2 minutes, watching carefully.
