Spiced Chocolate-Orange Yule Truffles

Silky dark chocolate truffles scented with orange zest, warm spice, and a snowy cocoa finish.

Ingredients

  • dark chocolate200 g, chopped
  • heavy cream100 ml
  • orange zest1 tbsp
  • ground cinnamon1/2 tsp
  • ground ginger1/4 tsp
  • butter1 tbsp
  • vanilla extract1 tsp
  • cocoa powder1/3 cup
  • fine salt1 pinch
  • optional crushed pistachios2 tbsp

Method

  1. 1Place the chopped chocolate in a heatproof bowl with the salt, cinnamon, ginger, and orange zest.
  2. 2Heat the cream until steaming but not boiling, then pour it over the chocolate and let it sit for 2 minutes.
  3. 3Stir slowly until smooth, then add the butter and vanilla and mix until glossy.
  4. 4Chill the mixture for 20 to 25 minutes, just until firm enough to scoop.
  5. 5Roll the mixture into small balls with your hands, then coat them in cocoa powder or crushed pistachios.
  6. 6Chill again for 5 minutes before serving.

Tips

  • If the mixture becomes too soft while rolling, pop it back in the fridge for a few minutes.
  • For a more pronounced citrus note, rub the zest into the sugar-free chocolate mixture before adding cream.
  • Store chilled and bring to cool room temperature before serving for the best texture.
