Spiced Chocolate-Orange Yule Truffles

Ingredients
- dark chocolate200 g, chopped
- heavy cream100 ml
- orange zest1 tbsp
- ground cinnamon1/2 tsp
- ground ginger1/4 tsp
- butter1 tbsp
- vanilla extract1 tsp
- cocoa powder1/3 cup
- fine salt1 pinch
- optional crushed pistachios2 tbsp
Method
- 1Place the chopped chocolate in a heatproof bowl with the salt, cinnamon, ginger, and orange zest.
- 2Heat the cream until steaming but not boiling, then pour it over the chocolate and let it sit for 2 minutes.
- 3Stir slowly until smooth, then add the butter and vanilla and mix until glossy.
- 4Chill the mixture for 20 to 25 minutes, just until firm enough to scoop.
- 5Roll the mixture into small balls with your hands, then coat them in cocoa powder or crushed pistachios.
- 6Chill again for 5 minutes before serving.
Tips
- If the mixture becomes too soft while rolling, pop it back in the fridge for a few minutes.
- For a more pronounced citrus note, rub the zest into the sugar-free chocolate mixture before adding cream.
- Store chilled and bring to cool room temperature before serving for the best texture.
