Cocoa-Nib Tahini Thumbprint Cookies with Orange Salt

Ingredients

  • all-purpose flour1 cup
  • baking powder1/2 teaspoon
  • salt1/4 teaspoon
  • tahini1/2 cup
  • brown sugar1/3 cup
  • neutral oil2 tablespoons
  • vanilla extract1 teaspoon
  • cocoa nibs1/4 cup
  • orange zest1 tablespoon
  • orange juice1 tablespoon
  • flaky salt1/4 teaspoon

Method

  1. 1Heat the oven to 350°F and line a baking sheet with parchment.
  2. 2Whisk the flour, baking powder, and salt in one bowl.
  3. 3In another bowl, stir together tahini, brown sugar, oil, vanilla, and orange juice until smooth.
  4. 4Add the dry ingredients and cocoa nibs, mixing just until a soft dough forms.
  5. 5Roll into 12 small balls and place on the tray; gently press a thumbprint into each center.
  6. 6Bake 10–12 minutes until the edges are set and the tops look matte.
  7. 7While still warm, dust the cookies lightly with orange zest and flaky salt, then cool completely.

Tips

  • Do not overbake; these are best when just set in the center.
  • If the dough seems crumbly, add a teaspoon more orange juice or water.
  • For a stronger citrus note, rub the orange zest into the sugar before mixing.
