  • glutinous rice flour1 cup
  • sugar1/4 cup
  • water3/4 cup
  • pears, finely diced2
  • butter, melted3 tbsp
  • brown sugar2 tbsp
  • ground cardamom1/4 tsp
  • white sesame seeds2 tbsp
  • saltpinch

Method

  1. 1Whisk glutinous rice flour, sugar, water, and a pinch of salt into a smooth batter.
  2. 2Bake or steam the batter in small tartlet molds until it turns translucent and elastic.
  3. 3Toss the diced pears with brown sugar and cardamom, then spoon into the warm mochi shells.
  4. 4Mix melted butter with sesame seeds to make a loose crumble and scatter it over the pears.
  5. 5Return the tartlets briefly to the oven so the topping toasts and the fruit softens.
  6. 6Cool slightly before unmolding and serving while the centers are still pleasantly chewy.

Tips

  • Lightly oil the molds so the mochi releases cleanly.
  • These are best eaten warm, when the texture contrast is strongest.
