Ingredients

  • puff pastry sheet, thawed1 large
  • pears, small diced2 medium
  • brown sugar3 tablespoons
  • unsweetened cocoa powder1 tablespoon
  • ground cinnamon1/2 teaspoon
  • vanilla extract1 teaspoon
  • cornstarch1 teaspoon
  • egg, beaten1
  • powdered sugar2 tablespoons
  • milk1 teaspoon

Method

  1. 1Preheat the oven to 425°F and line a baking sheet with parchment.
  2. 2Toss the pears with brown sugar, cocoa powder, cinnamon, vanilla, and cornstarch.
  3. 3Cut the puff pastry into four squares and place a spoonful of filling in the center of each.
  4. 4Fold the pastry over to form triangles or rectangles and seal the edges with a fork.
  5. 5Brush the tops with beaten egg and cut a small steam slit in each pastry.
  6. 6Bake for 15 to 18 minutes until puffed and deeply golden.
  7. 7Mix powdered sugar with milk and drizzle lightly over the warm pastries.

Tips

  • Keep the pastry cold until the moment you fill it for the best lift.
  • Use ripe but firm pears so the filling stays chunky, not watery.
  • These are lovely with a scoop of plain yogurt or vanilla ice cream.
