Ingredients

  • all-purpose flour1 cup

Method

  1. 1Heat the oven to 350°F and grease an 8-inch square pan.
  2. 2Whisk the flour, cocoa, baking powder, and salt in one bowl.
  3. 3In another bowl, whisk the sugar, egg, milk, melted butter, and vanilla until smooth.
  4. 4Stir the dry ingredients into the wet mixture just until combined.
  5. 5Fold in most of the cherries and spread the batter in the pan, then scatter the remaining cherries on top.
  6. 6Bake for 24 to 28 minutes until a toothpick comes out with a few moist crumbs, then cool before cutting into squares.

Tips

  • Do not overmix the batter or the cake can turn dense.
  • If using very juicy cherries, pat them dry first so the batter stays balanced.
  • These squares taste even better after fully cooling because the crumb sets nicely.
