Chocolate Raspberry Silk Tart

Ingredients

  • chocolate cookie crumbs1 1/2 cups
  • unsalted butter, melted6 tbsp
  • granulated sugar2 tbsp
  • dark chocolate, chopped10 oz
  • heavy cream1 cup
  • salt1 pinch
  • vanilla extract1 tsp
  • raspberries2 cups
  • powdered sugar2 tbsp
  • orange zest1 tsp

Method

  1. 1Heat the oven to 350°F and press the cookie crumbs, melted butter, and sugar into a tart pan to form the crust.
  2. 2Bake the crust for 8 minutes, then cool completely.
  3. 3Warm the cream until steaming, pour it over the chopped chocolate, and let it sit for 2 minutes.
  4. 4Stir the chocolate mixture until smooth, then add salt and vanilla.
  5. 5Pour the ganache into the cooled crust and chill until set, about 30 minutes.
  6. 6Toss the raspberries with powdered sugar and orange zest.
  7. 7Arrange the berries on top of the tart just before slicing and serving.

Tips

  • For the smoothest filling, let the ganache cool slightly before pouring so it stays glossy but not runny.
  • Add the raspberries at the end so they stay fresh and vibrant.
