Cardamom Honey Semolina Sunrise Cakes

  • fine semolina1 cup
  • all-purpose flour3/4 cup
  • baking powder1 1/2 tsp
  • ground cardamom1 tsp
  • fine salt1/4 tsp
  • plain yogurt3/4 cup
  • melted butter1/4 cup
  • honey1/3 cup
  • orange zest1 tbsp
  • chopped pistachios1/4 cup

Method

  1. 1Preheat the oven to 175°C and lightly grease a small cake pan or 8 muffin cups.
  2. 2In a bowl, whisk together semolina, flour, baking powder, cardamom, and salt.
  3. 3Stir in yogurt, melted butter, and orange zest until a thick batter forms.
  4. 4Spoon into the prepared pan, smoothing the top gently.
  5. 5Bake until the cakes are set and lightly golden, about 20 to 24 minutes.
  6. 6Warm the honey with 2 tablespoons of water in a small pan just until fluid.
  7. 7Brush or spoon the warm honey over the hot cakes, then rest for 10 minutes.
  8. 8Scatter pistachios on top before serving.
  9. 9Serve slightly warm with tea or coffee.

Tips

  • Do not overmix once the wet ingredients are added; the crumb should stay tender.
  • For a richer finish, add a pinch of saffron to the warm honey syrup.
