Cardamom-Date Coconut Cloud Cups

Light chilled coconut cups layered with fragrant date cream and a soft cardamom finish.

Ingredients

  • coconut milk1 1/2 cups
  • silken tofu8 oz
  • soft dates, pitted8
  • maple syrup2 tbsp
  • ground cardamom1/2 tsp
  • vanilla extract1 tsp
  • lemon zest1 tsp
  • saltpinch
  • toasted almonds, chopped1/4 cup

Method

  1. 1Blend the coconut milk, silken tofu, maple syrup, cardamom, vanilla, lemon zest, and salt until completely smooth.
  2. 2Spoon 2 to 3 tablespoons of the mixture into each serving cup.
  3. 3Blend the dates with a few tablespoons of the coconut mixture or a splash of water until they form a thick paste.
  4. 4Layer the date paste over the coconut base, then top with the remaining coconut mixture.
  5. 5Chill for 15 minutes in the freezer or longer in the refrigerator if you have time.
  6. 6Finish with chopped toasted almonds before serving.

Tips

  • If your dates are firm, soak them in hot water for 5 minutes first.
  • Blending the base very smooth gives the best cloudlike texture.
  • A little orange zest can replace the lemon zest for a warmer profile.
