Cardamom Berry Polenta Cake with Olive Oil Glaze

Ingredients

  • fine polenta1 cup
  • all-purpose flour1 cup
  • baking powder2 tsp
  • ground cardamom1 tsp
  • salt1/2 tsp
  • sugar3/4 cup
  • olive oil1/2 cup
  • unsweetened plant milk1 cup
  • lemon zest1 tbsp
  • mixed berries2 cups
  • powdered sugar3/4 cup
  • lemon juice2 tbsp

Method

  1. 1Heat oven to 350°F and line an 8-inch cake pan with parchment.
  2. 2Whisk polenta, flour, baking powder, cardamom, salt, and sugar in a bowl.
  3. 3In another bowl, mix olive oil, plant milk, and lemon zest.
  4. 4Stir wet ingredients into dry ingredients just until combined, then fold in most of the berries.
  5. 5Spread batter into the pan, scatter remaining berries on top, and bake 40–45 minutes until set.
  6. 6Whisk powdered sugar with lemon juice into a pourable glaze, then drizzle over the cooled cake.

Tips

  • If using juicy berries, toss them with a teaspoon of flour before folding in.
  • The cake slices cleanly after cooling fully, so be patient.
  • A pinch of flaky salt on top makes the fruit flavor pop.
