Cardamom Berry Polenta Cake with Olive Oil Glaze

Method
- 1Heat oven to 350°F and line an 8-inch cake pan with parchment.
- 2Whisk polenta, flour, baking powder, cardamom, salt, and sugar in a bowl.
- 3In another bowl, mix olive oil, plant milk, and lemon zest.
- 4Stir wet ingredients into dry ingredients just until combined, then fold in most of the berries.
- 5Spread batter into the pan, scatter remaining berries on top, and bake 40–45 minutes until set.
- 6Whisk powdered sugar with lemon juice into a pourable glaze, then drizzle over the cooled cake.
Tips
- If using juicy berries, toss them with a teaspoon of flour before folding in.
- The cake slices cleanly after cooling fully, so be patient.
- A pinch of flaky salt on top makes the fruit flavor pop.
