45 min 8 Chef

Ingredients

  • unsalted butter10 tablespoons
  • all-purpose flour1 1/2 cups
  • almond flour1/2 cup
  • granulated sugar3/4 cup
  • brown sugar1/3 cup
  • eggs2
  • plain yogurt1/2 cup
  • vanilla extract2 teaspoons
  • baking powder1 1/2 teaspoons
  • salt1/2 teaspoon
  • ripe plums, sliced4 medium
  • sliced almonds1/2 cup

Method

  1. 1Heat the oven to 350°F (175°C) and line a 9-inch round cake pan with parchment.
  2. 2Brown the butter in a small saucepan until nutty and amber, then let it cool for 5 minutes.
  3. 3Whisk the flour, almond flour, baking powder, and salt in a bowl.
  4. 4In another bowl, whisk the browned butter with granulated sugar, eggs, yogurt, and vanilla until smooth.
  5. 5Fold the dry ingredients into the wet mixture just until combined.
  6. 6Spread the batter in the pan and arrange the plum slices over the top in overlapping circles.
  7. 7Mix the brown sugar with sliced almonds and sprinkle it over the plums, then bake for 28 to 32 minutes until set and golden.
  8. 8Cool for at least 15 minutes before slicing so the crumb settles.

Tips

  • Use plums that are ripe but still firm so they hold their shape in the oven.
  • Brown the butter carefully; if it goes too far, the cake can taste bitter.
  • Serve warm with yogurt or whipped cream for a simple contrast to the tart fruit.
