Brown Butter Apricot Crumble Skillet

Ingredients

  • apricots, pitted and sliced6 cups
  • granulated sugar2 tbsp
  • lemon juice1 tbsp
  • all-purpose flour1/2 cup
  • rolled oats1/2 cup
  • brown sugar1/3 cup
  • unsalted butter5 tbsp
  • almonds, chopped1/3 cup
  • ground cinnamon1/2 tsp
  • salt1/4 tsp

Method

  1. 1Heat the oven to 400°F and place a 10-inch skillet or baking dish inside to warm.
  2. 2Toss the apricots with granulated sugar and lemon juice, then set aside while you make the topping.
  3. 3In a small pan, cook the butter over medium heat until nutty and amber with toasted milk solids at the bottom, then pour into a bowl to cool slightly.
  4. 4Mix flour, oats, brown sugar, almonds, cinnamon, and salt. Stir in the brown butter until clumps form.
  5. 5Carefully remove the hot skillet, add the apricots, and spread them into an even layer.
  6. 6Scatter the crumble over the fruit and bake 18 to 22 minutes until bubbling and deeply golden.
  7. 7Rest 10 minutes before serving so the juices thicken a bit.

Tips

  • Taste the apricots first; very sweet fruit may need less sugar.
  • For extra contrast, serve with plain yogurt or vanilla ice cream.
  • Watch the butter closely while browning so it goes nutty, not bitter.
