Ingredients
- apricots, pitted and sliced6 cups
- granulated sugar2 tbsp
- lemon juice1 tbsp
- all-purpose flour1/2 cup
- rolled oats1/2 cup
- brown sugar1/3 cup
- unsalted butter5 tbsp
- almonds, chopped1/3 cup
- ground cinnamon1/2 tsp
- salt1/4 tsp
Method
- 1Heat the oven to 400°F and place a 10-inch skillet or baking dish inside to warm.
- 2Toss the apricots with granulated sugar and lemon juice, then set aside while you make the topping.
- 3In a small pan, cook the butter over medium heat until nutty and amber with toasted milk solids at the bottom, then pour into a bowl to cool slightly.
- 4Mix flour, oats, brown sugar, almonds, cinnamon, and salt. Stir in the brown butter until clumps form.
- 5Carefully remove the hot skillet, add the apricots, and spread them into an even layer.
- 6Scatter the crumble over the fruit and bake 18 to 22 minutes until bubbling and deeply golden.
- 7Rest 10 minutes before serving so the juices thicken a bit.
Tips
- Taste the apricots first; very sweet fruit may need less sugar.
- For extra contrast, serve with plain yogurt or vanilla ice cream.
- Watch the butter closely while browning so it goes nutty, not bitter.
