Ingredients

  • egg whites, room temperature3
  • granulated sugar3/4 cup
  • cornstarch1 tsp
  • white vinegar1/2 tsp
  • vanilla extract1 tsp
  • heavy cream1 cup
  • powdered sugar2 tbsp
  • mixed berries, chopped if large2 cups
  • lemon zest1 tsp

Method

  1. 1Preheat the oven to 250°F and line a baking sheet with parchment paper.
  2. 2Beat the egg whites until foamy, then gradually add the granulated sugar and continue beating until glossy, stiff peaks form.
  3. 3Fold in the cornstarch, vinegar, and half of the vanilla just until combined.
  4. 4Spoon the meringue into 4 cup-shaped rounds on the parchment, building up the sides slightly.
  5. 5Bake for 40 minutes, then turn off the oven and let the meringues cool inside with the door closed for 15 minutes before removing.
  6. 6Whip the heavy cream with the powdered sugar and remaining vanilla until soft peaks form.
  7. 7Fill each cooled meringue cup with cream, top with berries and lemon zest, and finish with mint leaves.
