30 min 4 Medium
Ingredients
- heavy cream1 1/2 cups
- milk1 cup
- granulated sugar1/4 cup
- unflavored gelatin2 1/4 teaspoons
- cold water3 tablespoons
- vanilla extract1 teaspoon
- rosewater1/4 teaspoon
- fresh strawberries2 cups
- lemon juice1 tablespoon
- mint leavesfor garnish
Method
- 1Sprinkle the gelatin over cold water in a small bowl and let it bloom for 5 minutes.
- 2Warm the cream, milk, and sugar in a saucepan over medium heat until the sugar dissolves and the mixture is steaming, not boiling.
- 3Remove from the heat and whisk in the bloomed gelatin until fully dissolved.
- 4Stir in vanilla and rosewater, then pour the mixture into four lightly oiled glasses or ramekins.
- 5Chill for at least 3 hours, or until fully set.
- 6Meanwhile, mash half the strawberries with lemon juice and chop the remaining berries for texture.
- 7Spoon the strawberry mixture over the set panna cotta and garnish with mint before serving.
Tips
- Rosewater is potent; a tiny amount is enough to add a soft floral note.
- For a cleaner unmold, briefly dip ramekins in warm water before inverting.
- Choose very ripe strawberries for the brightest color and sweetest topping.
