Ingredients

  • heavy cream1 1/2 cups
  • milk1 cup
  • granulated sugar1/4 cup
  • unflavored gelatin2 1/4 teaspoons
  • cold water3 tablespoons
  • vanilla extract1 teaspoon
  • rosewater1/4 teaspoon
  • fresh strawberries2 cups
  • lemon juice1 tablespoon
  • mint leavesfor garnish

Method

  1. 1Sprinkle the gelatin over cold water in a small bowl and let it bloom for 5 minutes.
  2. 2Warm the cream, milk, and sugar in a saucepan over medium heat until the sugar dissolves and the mixture is steaming, not boiling.
  3. 3Remove from the heat and whisk in the bloomed gelatin until fully dissolved.
  4. 4Stir in vanilla and rosewater, then pour the mixture into four lightly oiled glasses or ramekins.
  5. 5Chill for at least 3 hours, or until fully set.
  6. 6Meanwhile, mash half the strawberries with lemon juice and chop the remaining berries for texture.
  7. 7Spoon the strawberry mixture over the set panna cotta and garnish with mint before serving.

  • Rosewater is potent; a tiny amount is enough to add a soft floral note.
  • For a cleaner unmold, briefly dip ramekins in warm water before inverting.
  • Choose very ripe strawberries for the brightest color and sweetest topping.
