Method

  1. 1Soak the rice noodles in hot water until flexible, then drain and cut them into shorter lengths.
  2. 2Mix soy sauce, sesame oil, grated ginger, and the juice of one lime to make a glaze.
  3. 3Cut the snow peas and carrot into thin matchsticks, and slice the green onions.
  4. 4Dip each rice paper wrapper briefly in warm water, then lay two wrappers slightly overlapping to form a sturdier parcel base.
  5. 5Place a small nest of noodles, vegetables, and a salmon fillet in the center of each parcel, brush with glaze, and fold into sealed packets.
  6. 6Arrange the parcels seam-side down in a steamer basket and steam until the salmon flakes easily.
  7. 7Finish with sesame seeds, cilantro, and extra lime wedges for squeezing.

Tips

  • Keep the rice paper just pliable, not overly soft, so it seals without tearing.
