Ingredients
- salmon fillets4
- rice noodles6 oz
- snow peas2 cups
- carrot1 large
- green onions4
- soy sauce3 tbsp
- lime2
- sesame oil2 tbsp
- ginger1 tbsp
- sesame seeds2 tbsp
- rice paper wrappers8
- cilantro1/4 cup
Method
- 1Soak the rice noodles in hot water until flexible, then drain and cut them into shorter lengths.
- 2Mix soy sauce, sesame oil, grated ginger, and the juice of one lime to make a glaze.
- 3Cut the snow peas and carrot into thin matchsticks, and slice the green onions.
- 4Dip each rice paper wrapper briefly in warm water, then lay two wrappers slightly overlapping to form a sturdier parcel base.
- 5Place a small nest of noodles, vegetables, and a salmon fillet in the center of each parcel, brush with glaze, and fold into sealed packets.
- 6Arrange the parcels seam-side down in a steamer basket and steam until the salmon flakes easily.
- 7Finish with sesame seeds, cilantro, and extra lime wedges for squeezing.
Tips
- Keep the rice paper just pliable, not overly soft, so it seals without tearing.
- Cut vegetables thinly so they steam at the same rate as the salmon.
- For a neat presentation, serve the parcels immediately after steaming while they are still intact and glossy.
