Method
- 1Pat the chicken dry and season it with salt and pepper.
- 2Zest one grapefruit, then squeeze both grapefruits and the orange to get about 1 cup of juice.
- 3Rinse the rice, then cook it in chicken broth until tender; fold in half the grapefruit zest and a spoonful of the juice.
- 4Heat olive oil in a skillet and sear the chicken until golden on both sides.
- 5Add the remaining citrus juice and honey to the skillet, simmer until the chicken is cooked through and the sauce turns glossy.
- 6Toss in thyme and sliced scallions, then spoon the citrus glaze over the chicken.
- 7Serve the chicken over the warm rice and scatter a few grapefruit segments on top.
