Citrus-Glazed Chicken with Warm Grapefruit Rice

Ingredients

  • boneless chicken thighs1.5 lb
  • kosher salt1.5 tsp
  • black pepper1 tsp
  • olive oil2 tbsp
  • pink grapefruit2
  • orange1
  • jasmine rice1.5 cups
  • chicken broth3 cups
  • honey2 tbsp
  • fresh thyme1 tbsp
  • scallions3

Method

  1. 1Pat the chicken dry and season it with salt and pepper.
  2. 2Zest one grapefruit, then squeeze both grapefruits and the orange to get about 1 cup of juice.
  3. 3Rinse the rice, then cook it in chicken broth until tender; fold in half the grapefruit zest and a spoonful of the juice.
  4. 4Heat olive oil in a skillet and sear the chicken until golden on both sides.
  5. 5Add the remaining citrus juice and honey to the skillet, simmer until the chicken is cooked through and the sauce turns glossy.
  6. 6Toss in thyme and sliced scallions, then spoon the citrus glaze over the chicken.
  7. 7Serve the chicken over the warm rice and scatter a few grapefruit segments on top.

Tips

  • If the sauce reduces too quickly, add a splash of broth to keep it silky.
  • Use pink grapefruit for a sweeter finish, or regular grapefruit for a sharper edge.
  • Let the rice sit covered for 5 minutes after cooking so it stays fluffy.
