Ingredients

  • cornmeal1 cup
  • all-purpose flour1 cup
  • baking powder2 tsp
  • milk1 cup
  • egg1
  • melted butter3 tbsp
  • zucchini1 large
  • carrot2 medium
  • yellow bell pepper1
  • shredded cheddar1 cup
  • salt1 tsp

Method

  1. 1Preheat the oven to 400°F and grease a 9-inch round pan.
  2. 2Whisk the cornmeal, flour, baking powder, and salt together.
  3. 3Stir in the milk, egg, and melted butter until a thick batter forms.
  4. 4Use a peeler to create long ribbons from the zucchini and carrots, and slice the bell pepper into thin strips.
  5. 5Spread the batter in the pan, then arrange the vegetable ribbons in loose spirals across the top and press them in lightly.
  6. 6Sprinkle cheddar over the surface and bake until the center is set and the top is deeply golden.
  7. 7Cool for 10 minutes before slicing into wedges.

Tips

  • Thin vegetable ribbons bake more evenly than thick slices.
  • For a deeper flavor, add a pinch of smoked paprika to the batter.
  • This is easiest to cut cleanly after a short rest out of the oven.
