Saffron-Glazed Chickpea Fritters with Crunchy Herb Slaw

Golden chickpea fritters get a saffron-honey glaze and a bright, crunchy herb slaw for a fast dinner with restaurant flair.

Ingredients

  • canned chickpeas, drained and rinsed2 cups
  • egg1 large
  • breadcrumbs1/2 cup
  • ground cumin1 teaspoon
  • garlic clove, finely grated1
  • olive oil3 tablespoons
  • honey2 tablespoons
  • warm water2 tablespoons
  • saffron threads, lightly crushedpinch
  • green cabbage, very thinly sliced2 cups
  • fresh dill and parsley, chopped1/2 cup

Method

  1. 1Mash the chickpeas until about three-quarters broken down, then mix with egg, breadcrumbs, cumin, garlic, and a pinch of salt.
  2. 2Shape the mixture into 8 small patties and chill briefly while you make the slaw.
  3. 3Toss cabbage and herbs with a little salt, a drizzle of olive oil, and a splash of lemon juice if desired.
  4. 4Warm the honey with water and saffron in a small pan until glossy, then keep on low heat.
  5. 5Pan-fry the fritters in olive oil over medium heat until deeply golden on both sides, about 3 minutes per side.
  6. 6Brush or spoon the saffron glaze over the hot fritters and serve on the herb slaw.

Tips

  • If the mixture feels loose, add a little more breadcrumbs and let it rest 2 minutes.
  • For extra crunch, sear the patties undisturbed before flipping.
