Method
- 1Mash the chickpeas until about three-quarters broken down, then mix with egg, breadcrumbs, cumin, garlic, and a pinch of salt.
- 2Shape the mixture into 8 small patties and chill briefly while you make the slaw.
- 3Toss cabbage and herbs with a little salt, a drizzle of olive oil, and a splash of lemon juice if desired.
- 4Warm the honey with water and saffron in a small pan until glossy, then keep on low heat.
- 5Pan-fry the fritters in olive oil over medium heat until deeply golden on both sides, about 3 minutes per side.
- 6Brush or spoon the saffron glaze over the hot fritters and serve on the herb slaw.
Tips
- If the mixture feels loose, add a little more breadcrumbs and let it rest 2 minutes.
- For extra crunch, sear the patties undisturbed before flipping.
