Charred Grape and Almond Grain Bowls

  • cooked farro3 cups
  • seedless red grapes2 cups
  • olive oil2 tbsp
  • salt1 tsp
  • smoked paprika1/2 tsp
  • baby arugula4 cups
  • toasted sliced almonds1/3 cup
  • lemon zest1 tsp
  • lemon juice2 tbsp
  • fresh dill, chopped2 tbsp

Method

  1. 1Heat a skillet over medium-high and add the grapes with olive oil, salt, and smoked paprika.
  2. 2Cook, shaking the pan often, until the grapes blister and release some juices, about 4 to 5 minutes.
  3. 3Divide the warm farro among bowls and mound the arugula on top.
  4. 4Spoon the hot grapes and pan juices over the greens and grains.
  5. 5Scatter almonds, lemon zest, and dill over each bowl.
  6. 6Finish with lemon juice and a final pinch of salt if needed.
  7. 7Serve immediately while the grapes are still warm and fragrant.

Tips

  • Use a mix of red and black grapes for deeper flavor and color.
  • If the farro is cold, warm it briefly with a splash of water before assembling.
