Charred Peach & White Bean Flatbread with Basil Drizzle

Sweet charred peaches, creamy beans, and crisp flatbread meet a bright basil drizzle for a sunny, savory lunch.

Ingredients

  • flatbreads4 small
  • olive oil3 tbsp
  • ripe peaches, sliced2
  • cannellini beans, drained and rinsed1 1/2 cups
  • garlic, finely grated1 clove
  • lemon zest1 tsp
  • fresh basil leaves1 packed cup
  • green olives, chopped1/3 cup
  • red pepper flakes1/4 tsp
  • flaky saltto taste

Method

  1. 1Heat a skillet over medium-high and brush peach slices lightly with oil.
  2. 2Sear peaches for 1–2 minutes per side until caramelized; set aside.
  3. 3Mash the beans with garlic, lemon zest, 1 tablespoon olive oil, and a pinch of salt until partly creamy.
  4. 4Warm the flatbreads in a dry pan or oven until flexible and lightly crisp.
  5. 5Blend basil with the remaining olive oil and a splash of water to make a loose drizzle.
  6. 6Spread bean mixture over the flatbreads, top with peaches and olives, then drizzle with basil oil and red pepper flakes.

Tips

  • Use slightly underripe peaches if you want cleaner slices and more browning.
  • A quick splash of vinegar over the beans adds extra brightness.
  • This also works well with nectarines or plums.
