Ingredients
- flatbreads4 small
- olive oil3 tbsp
- ripe peaches, sliced2
- cannellini beans, drained and rinsed1 1/2 cups
- garlic, finely grated1 clove
- lemon zest1 tsp
- fresh basil leaves1 packed cup
- green olives, chopped1/3 cup
- red pepper flakes1/4 tsp

Method
- 1Heat a skillet over medium-high and brush peach slices lightly with oil.
- 2Sear peaches for 1–2 minutes per side until caramelized; set aside.
- 3Mash the beans with garlic, lemon zest, 1 tablespoon olive oil, and a pinch of salt until partly creamy.
- 4Warm the flatbreads in a dry pan or oven until flexible and lightly crisp.
- 5Blend basil with the remaining olive oil and a splash of water to make a loose drizzle.
- 6Spread bean mixture over the flatbreads, top with peaches and olives, then drizzle with basil oil and red pepper flakes.
Tips
- Use slightly underripe peaches if you want cleaner slices and more browning.
- A quick splash of vinegar over the beans adds extra brightness.
