Tahini-Date Cocoa Pocket Loaves

Mini hand-shaped loaves with a soft cocoa crumb, sticky date centers, and a sesame-tahini glaze.

Ingredients

  • all-purpose flour170 g
  • cocoa powder25 g
  • baking soda1/2 tsp
  • salt1/4 tsp
  • brown sugar70 g
  • egg1 large
  • plain yogurt100 g
  • vegetable oil45 ml
  • dates, finely chopped90 g
  • tahini35 g
  • milk2 tbsp

Method

  1. 1Heat the oven to 175°C and line a small loaf pan with parchment or lightly grease 4 mini loaf molds.
  2. 2Whisk flour, cocoa powder, baking soda, salt, and brown sugar together.
  3. 3In a second bowl whisk egg, yogurt, oil, and milk until smooth.
  4. 4Fold the wet mixture into the dry ingredients until just combined, then stir in the chopped dates.
  5. 5Divide the batter into the molds and swirl a small spoonful of tahini through the top of each.
  6. 6Bake for 22-28 minutes until the centers are set and a tester comes out with a few moist crumbs.
  7. 7Cool for 10 minutes before unmolding.

Tips

  • For extra contrast, reserve a few dates to press onto the top before baking.
  • A light drizzle of warm tahini after baking makes the flavor richer.
  • Do not overmix the batter or the loaves may bake up tough.
