Tahini-Date Cocoa Pocket Loaves

Ingredients
- all-purpose flour170 g
- cocoa powder25 g
- baking soda1/2 tsp
- salt1/4 tsp
- brown sugar70 g
- egg1 large
- plain yogurt100 g
- vegetable oil45 ml
- dates, finely chopped90 g
- tahini35 g
- milk2 tbsp
Method
- 1Heat the oven to 175°C and line a small loaf pan with parchment or lightly grease 4 mini loaf molds.
- 2Whisk flour, cocoa powder, baking soda, salt, and brown sugar together.
- 3In a second bowl whisk egg, yogurt, oil, and milk until smooth.
- 4Fold the wet mixture into the dry ingredients until just combined, then stir in the chopped dates.
- 5Divide the batter into the molds and swirl a small spoonful of tahini through the top of each.
- 6Bake for 22-28 minutes until the centers are set and a tester comes out with a few moist crumbs.
- 7Cool for 10 minutes before unmolding.
Tips
- For extra contrast, reserve a few dates to press onto the top before baking.
- A light drizzle of warm tahini after baking makes the flavor richer.
- Do not overmix the batter or the loaves may bake up tough.
