Ingredients

  • all-purpose flour1 1/4 cups
  • baking powder1 tsp
  • salt1/4 tsp
  • olive oil1/3 cup
  • honey1/3 cup
  • egg2
  • plain yogurt1/2 cup
  • fresh rosemary, finely chopped1 tbsp
  • dried figs, chopped3/4 cup
  • sesame seeds2 tbsp
  • milk2 tbsp

Method

  1. 1Heat the oven to 350°F and line a small square pan with parchment.
  2. 2Whisk the flour, baking powder, and salt in one bowl.
  3. 3In another bowl, whisk the olive oil, honey, eggs, yogurt, milk, and rosemary until glossy.
  4. 4Fold the dry ingredients into the wet mixture, then stir in the chopped figs.
  5. 5Pour the batter into the pan and sprinkle sesame seeds over the surface.
  6. 6Bake until the center springs back and a tester comes out clean, about 30 to 35 minutes.
  7. 7Cool slightly before slicing into squares and serving.

Tips

  • Let the cake cool before slicing so the fig pieces stay neatly distributed.
  • A little extra honey drizzled over the warm squares deepens the aroma and sheen.
