Pomegranate-Glazed Halloumi and Roasted Grape Flatbreads

Ingredients
- store-bought flatbreads4 small
- halloumi, sliced8 oz (225 g)
- red grapes2 cups
- olive oil2 tablespoons
- pomegranate molasses2 tablespoons
- honey1 tablespoon
- baby arugula2 cups
- red onion, very thinly sliced1/2 small
- fresh mint, torn1/4 cup
- za'atar1 teaspoon
- lemon juice1 tablespoon
Method
- 1Heat the oven to 450°F (230°C) and toss the grapes with 1 tablespoon olive oil on a sheet pan.
- 2Roast the grapes for 10 to 12 minutes until softened and beginning to blister.
- 3Whisk together pomegranate molasses, honey, lemon juice, and the remaining olive oil.
- 4Brush the flatbreads lightly with the glaze and warm them in the oven for 2 to 3 minutes.
- 5Sear the halloumi in a dry skillet over medium heat until browned on both sides.
- 6Top each flatbread with arugula, roasted grapes, halloumi, onion, and mint, then drizzle with the remaining glaze.
- 7Finish with za'atar and serve immediately while the cheese is warm.
Tips
- Use a hot pan for the halloumi so it browns before it softens too much.
- If grapes are very large, halve them so they burst more evenly.
- A handful of chopped pistachios adds crunch and makes the flatbreads feel more complete.
