Sweet Potato, Apple, and Sage Hand Pies

Ingredients

  • refrigerated pie dough2 sheets
  • sweet potato1 large
  • apple1 large
  • butter2 tbsp
  • brown sugar2 tbsp
  • fresh sage1 tbsp chopped
  • cinnamon1/2 tsp
  • salt1/4 tsp
  • egg1
  • milk1 tbsp
  • flour for dusting2 tbsp

Method

  1. 1Heat the oven to 400°F and line a baking sheet with parchment.
  2. 2Peel and dice the sweet potato, then microwave or steam it until very soft; mash until mostly smooth.
  3. 3Cook the apple in butter with brown sugar, sage, cinnamon, and salt until just tender, then stir into the sweet potato.
  4. 4Roll out the pie dough and cut into 8 equal rounds or squares.
  5. 5Place filling on half of the dough pieces, brush edges with water, and seal with the remaining pieces using a fork.
  6. 6Brush the tops with beaten egg mixed with milk, cut a small steam vent, and bake for 20 to 24 minutes until golden.

Tips

  • Let the filling cool before assembling so the dough stays flaky.
  • A tiny pinch of black pepper in the filling adds depth without making it spicy.
  • These freeze well before baking; bake straight from frozen, adding a few extra minutes.
