Cocoa Olive Oil Pear Buckle Squares

  • all-purpose flour1 1/2 cups
  • unsweetened cocoa powder1/3 cup
  • baking powder1 1/2 teaspoons
  • baking soda1/2 teaspoon
  • salt1/2 teaspoon
  • granulated sugar3/4 cup
  • eggs2
  • olive oil1/2 cup
  • plain yogurt3/4 cup
  • ripe pears, diced2
  • ground cardamom1/2 teaspoon

Method

  1. 1Heat oven to 350°F (175°C) and line an 8-inch square pan with parchment.
  2. 2Whisk flour, cocoa, baking powder, baking soda, salt, and sugar in a large bowl.
  3. 3In another bowl, whisk eggs, olive oil, and yogurt until glossy.
  4. 4Fold the wet mixture into the dry ingredients just until combined, then stir in the diced pears and cardamom.
  5. 5Spread the batter into the pan and tap lightly to level.
  6. 6Bake for 22 to 28 minutes until a toothpick comes out with a few moist crumbs.
  7. 7Cool before slicing into squares so the crumb sets cleanly.

Tips

  • Choose pears that are ripe but still firm so they hold shape while baking.
  • A dusting of powdered sugar makes the top look elegant without adding much sweetness.
