  • cooked jasmine rice, cooled2 cups
  • all-purpose flour1 1/2 cups
  • baking powder2 tsp
  • salt1 tsp
  • plain yogurt1 cup
  • eggs2
  • honey1/4 cup
  • unsalted butter, melted6 tbsp
  • carrots, finely grated1 1/2 cups
  • chopped dill2 tbsp
  • lemon zest1 tsp

Method

  1. 1Heat the oven to 350°F and line an 8x8-inch pan with parchment.
  2. 2Whisk flour, baking powder, and salt in a bowl.
  3. 3In another bowl, mix yogurt, eggs, honey, and melted butter, then fold in the cooked rice.
  4. 4Stir the dry ingredients into the wet mixture just until combined and spread half into the pan.
  5. 5Mix the grated carrots with dill and lemon zest, then spoon over the batter and swirl lightly with a knife before topping with the remaining batter.
  6. 6Bake until set and lightly golden, then cool completely before slicing into squares.

Tips

  • Cool fully before cutting or the squares will be crumbly.
  • Use well-drained carrots so the swirl stays distinct.
  • These are nice warm or room temperature with fruit on the side.
