Miso Apricot Hand Pies with Sesame Sugar

Ingredients

  • ready-made pastry dough250 g
  • dried apricots, finely chopped120 g
  • white miso20 g
  • hot water60 ml
  • brown sugar35 g
  • lemon juice10 ml
  • cornstarch8 g
  • egg1 large
  • sesame seeds20 g
  • granulated sugar15 g

Method

  1. 1Soak the chopped apricots in hot water until plump, then stir in miso, brown sugar, lemon juice, and cornstarch.
  2. 2Roll the pastry and cut it into squares or circles of equal size.
  3. 3Spoon a small amount of filling onto half the pieces, leaving room at the edges.
  4. 4Seal with the remaining pastry, crimp with a fork, and brush with beaten egg.
  5. 5Mix sesame seeds with granulated sugar and scatter over the tops.
  6. 6Bake until puffed and golden, then cool slightly before eating.

Tips

  • Do not overfill the pies or the sweet-salty filling may leak during baking.
  • A tiny pinch of salt in the egg wash makes the sesame topping taste brighter.
