Ingredients

Method
- 1Soak the chopped apricots in hot water until plump, then stir in miso, brown sugar, lemon juice, and cornstarch.
- 2Roll the pastry and cut it into squares or circles of equal size.
- 3Spoon a small amount of filling onto half the pieces, leaving room at the edges.
- 4Seal with the remaining pastry, crimp with a fork, and brush with beaten egg.
- 5Mix sesame seeds with granulated sugar and scatter over the tops.
- 6Bake until puffed and golden, then cool slightly before eating.
Tips
- Do not overfill the pies or the sweet-salty filling may leak during baking.
- A tiny pinch of salt in the egg wash makes the sesame topping taste brighter.
