Smoky Plum-Glazed Tofu Skillet with Charred Snap Peas

  • extra-firm tofu, pressed and cubed14 oz
  • snap peas3 cups
  • plum jam3 tablespoons
  • soy sauce2 tablespoons
  • rice vinegar1 tablespoon
  • smoked paprika1 teaspoon
  • sesame oil2 teaspoons
  • cornstarch1 tablespoon
  • neutral oil2 tablespoons
  • scallions, sliced2
  • toasted sesame seeds1 tablespoon

Method

  1. 1Toss tofu cubes with cornstarch, smoked paprika, and a pinch of salt.
  2. 2Sear the tofu in neutral oil in a hot skillet until crisp and browned on several sides, then transfer to a plate.
  3. 3Add snap peas to the same pan and cook until blistered and bright green, about 2 minutes.
  4. 4Stir plum jam, soy sauce, rice vinegar, and sesame oil together, then pour into the skillet.
  5. 5Return the tofu to the pan and toss until everything is coated in a sticky glaze.
  6. 6Finish with scallions and sesame seeds and serve right away.

Tips

  • Pressing the tofu well is the key to a crisp crust.
  • If the sauce thickens too quickly, loosen it with a tablespoon of water.
