Method
- 1Toss tofu cubes with cornstarch, smoked paprika, and a pinch of salt.
- 2Sear the tofu in neutral oil in a hot skillet until crisp and browned on several sides, then transfer to a plate.
- 3Add snap peas to the same pan and cook until blistered and bright green, about 2 minutes.
- 4Stir plum jam, soy sauce, rice vinegar, and sesame oil together, then pour into the skillet.
- 5Return the tofu to the pan and toss until everything is coated in a sticky glaze.
- 6Finish with scallions and sesame seeds and serve right away.
Tips
- Pressing the tofu well is the key to a crisp crust.
