Smoky White Bean and Plum Pepper Pita Boats

Ingredients

  • pita breads4
  • canned white beans, drained and rinsed2 cups
  • plums, sliced2
  • cucumber, diced1 cup
  • red onion, finely chopped1/4 cup
  • smoked paprika1 tsp
  • lemon juice1 tbsp
  • olive oil2 tbsp
  • salt3/4 tsp
  • baby greens2 cups
  • pumpkin seeds1/4 cup

Method

  1. 1Heat the oven or a toaster oven to 425°F and place the plum slices on a tray with 1 teaspoon of oil.
  2. 2Roast the plums for 8 to 10 minutes until softened and slightly jammy.
  3. 3Mash half the beans with smoked paprika, lemon juice, salt, and 1 tablespoon oil, leaving the rest whole.
  4. 4Warm the pita breads so they open easily.
  5. 5Fill each pita with baby greens, the bean mixture, cucumber, onion, and roasted plums.
  6. 6Top with pumpkin seeds for crunch and serve immediately.

Tips

  • If the plums are very tart, add a tiny pinch of sugar before roasting.
  • Keep some beans whole for a better texture contrast.
  • A splash of vinegar works if you do not have lemon.
