Miso-Glazed Cauliflower with Blackberry Mustard Greens

Ingredients

  • cauliflower2 large heads
  • olive oil3 tbsp
  • white miso3 tbsp
  • maple syrup1 1/2 tbsp
  • rice vinegar1 tbsp
  • dijon mustard1 tsp
  • blackberries1 1/2 cups
  • mustard greens6 cups
  • garlic, minced2 cloves
  • sesame seeds2 tbsp

Method

  1. 1Heat the oven to 220°C and line a baking tray with parchment.
  2. 2Trim the cauliflower into large florets or thick steaks and toss with olive oil.
  3. 3Roast for 20 minutes, turning once, until deeply browned on the edges.
  4. 4Whisk miso, maple syrup, rice vinegar, and mustard into a smooth glaze.
  5. 5Brush the glaze over the cauliflower and return it to the oven for 8 to 10 minutes until sticky and caramelized.
  6. 6Meanwhile, sauté garlic in a pan for 30 seconds, then add mustard greens and cook just until wilted.
  7. 7Fold in blackberries off the heat so they soften slightly without breaking apart, then season lightly.
  8. 8Serve the glazed cauliflower over the greens and finish with sesame seeds.

  • Keep an eye on the glaze in the final minutes; miso caramelizes quickly.
  • A mix of whole and halved blackberries gives the dish better texture and visual contrast.
