Ingredients

Method
- 1Heat the oven to 400°F (200°C) and line a tray with parchment.
- 2Cut the flour, salt, and cold butter together until sandy, then add cold water until a dough just forms.
- 3Chill the dough for 5 minutes while you mix the filling.
- 4Combine the mashed sweet potato with smoked paprika, cinnamon, lime zest, and brown sugar.
- 5Roll the dough thin and cut it into 8 rounds or squares.
- 6Spoon filling onto half the pieces, brush edges with beaten egg, and seal with the remaining pieces.
- 7Crimp the edges with a fork, brush tops with egg, and cut a small steam vent in each pie.
- 8Bake for 14 to 16 minutes until deeply golden and crisp.
