Silken Tofu Citrus Custard Cups

Ingredients

  • silken tofu12 oz
  • orange juice1/2 cup
  • maple syrup3 tbsp
  • vanilla extract1 tsp
  • cornstarch1 tbsp
  • fine salt1 pinch
  • orange zest1 tsp
  • fresh berries or sliced citrus1 cup
  • toasted sesame seeds1 tbsp

Method

  1. 1Blend the tofu, orange juice, maple syrup, vanilla, cornstarch, salt, and orange zest until perfectly smooth.
  2. 2Pour the mixture into a small saucepan and cook over medium-low heat, stirring constantly, until it thickens and looks glossy, about 6 to 8 minutes.
  3. 3Spoon into 4 cups or ramekins and chill for at least 30 minutes, or until set.
  4. 4Top with berries or citrus slices just before serving.
  5. 5Sprinkle with toasted sesame seeds for a subtle nutty finish.

Tips

  • Keep the heat gentle so the custard stays silky and does not scorch.
  • For a firmer set, chill longer; for a softer dessert, serve after 30 minutes.
